What you will need:
Fresh or frozen shelled edamame beans- ½ cup
Plain greek yogurt- ¼ cup
Fresh mint (minced)- ¼ tsp
Steam basket and pot
Food processor or blender
In a saucepan, bring 1 inch of water to boil. Place edamame in steam basket, place basket into pot and cover. Steam beans for 20+ min or until tender (frozen beans tend to take longer). If you don’t have access to a steam basket it is best to use frozen edamame and cook beans according to directions on the package.
Remove the edamame beans from the shell and blend them in a food processor or blender until smooth. You should not have to add water, but if you find that the beans still have tough consistency and are not becoming smooth you can add a touch of the water used for boiling. *The water used during steaming contains nutrients released during cooking
Once beans become smooth add greek yogurt and blend until smooth. Add mint and serve.
* Edamame beans are an excellent source of protein, vitamins and minerals such as: calcium, copper, folate, iron, magnesium, manganese, phosphorus, thiamin, vitamin A, vitamin C and vitamin K.
